Directions:
Heat oil in a skillet over medium heat and saute garlic until fragrant, 1-2 minutes. Add tomatoes and increase heat to medium-high. Cook about 10 minutes, stirring in salami after 8 minutes to heat through. Add oregano, pepperoncini, salt, pepper and sugar to taste.

- 3 lb ripe round tomatoes, cored, peeled, seeded, and cut into 1/2″ pieces
- 4 oz salami , cubed
- 1 Tbsp fresh oregano leaves, chopped
- 1/3 c pepperoncini , thinly sliced
- 1/4 tsp salt
- 1/8 tsp pepper, freshly ground
- Granulated sugar
