Fresh Tomato Sauce with Italian Meats

Directions:

Heat oil in a skillet over medium heat and saute garlic until fragrant, 1-2 minutes. Add tomatoes and increase heat to medium-high. Cook about 10 minutes, stirring in salami after 8 minutes to heat through. Add oregano, pepperoncini, salt, pepper and sugar to taste.

Ingredients:

  • 2 Tbsp extra-virgin olive oil
  • 2 medium garlic cloves, minced
  • 3 lb ripe round tomatoes, cored, peeled, seeded, and cut into 1/2″ pieces
  • 4 oz salami , cubed
  • 1 Tbsp fresh oregano leaves, chopped
  • 1/3 c pepperoncini , thinly sliced
  • 1/4 tsp salt
  • 1/8 tsp pepper, freshly ground
  • Granulated sugar
